My Philosophy on cooking

My Philosophy on cooking is - If it's not fresh, then you must have stale thinking. Instead of recreating a already known dish, create something thats new and fresh. You dont get known for what you can copy, but rather what you can create.

How do you feel about altering, modifying, or updating other recipes or dishes? Does that count as creating something "new", or is that still merely copying the other recipe? That is a basic element of any "fusion" cuisine, like the "East Meets West" style of celebrity chef Ming Tsai, for instance.
