Make it your own!

Blog Blog Blog...

Blogging what exactly is it? It really is anything you want it to be. Poor out your heart and soul into it or just make up random stupid stuff to say. Friends, family, your daily life. But, I'm guessing since this is a blog related to food, that'd be the best thing to write about in here.

There is just so much to say about food, and even though you may learn mostly all French food techiques, there are many more out there. Currently being in Cuissine Across Culture, you do learn things that you wouldn't even think to know about. Chef Tyler Brassil is a funny, but a helpful chef. You should take what you gain in that class (and all other classes) and run with it. Don't just do as they tell you to make, make it your own!!

Here is a dish I am very proud of... It is a pan seared Duck Breast with a beautiful Apricot ginger Sauce... Needless to say, it only lasted about 2 minutes after plating.

pray for me

Hello an Good Morning!

Another lovely night of cooking an hustling for people i will never meet or see. Its hard at times try en to keep a smile on your face when you have to deal with having to balance time for class, work an home work day in an day out, but you may find a way to deal with it, me I just take it day by day an pray that the lord will give me strength to do it each day I am thankful for the gifts that the lord has given me but at times get a little discourage at how much of my life an time is use for work an school thank god it does not last for ever .

The Challenge

My life as of now is very busy. Trying to get an externship at Per Se, doing competitions for the ACF student culinary team, and training to become a banquet chef at work. Among a recipe contest that I am working on to win $5000. AHHHHHHHHH.. when do I get a break. But cooking is what I love to do. So I force myself to get up each morning, I force myself to stay at work and get the hours. Getting up early and getting home late is starting to catch up to me. But im still pushing hard as I can. Because all of this hard work is going to lead to something great in the end.

With every struggle comes strength.

Patience

I believe that only with life experiences one develops this skill. Patience is a skill, not something one is born with or taught by your parents. Imagine trying to live your life without it. It would be completely insane! I learned it the hard way, and I do recommend people to study their lifestyle and choices, in order to develop this necessary skill to have a more pleasant stay on this planet.

Here we have a beautiful Cake. What kind I may ask is it? What is it made of?That is correct, Passion, care and time, lots of time.
This is a Black Forest Cake...it consist of flour of course, chocolate, and Black Cherries on top....made in Baking and Pastry under the careful guidence and instuction of, Chef Pasiecki, our Instructor for the class. Thank you Chef, we enjoyed the entire Term and instruction.

My Philosophy on cooking

My Philosophy on cooking is - If it's not fresh, then you must have stale thinking. Instead of recreating a already known dish, create something thats new and fresh. You dont get known for what you can copy, but rather what you can create.

Slideshow is working!

OK, I've got our slideshow working.  I uploaded a few pictures from local restaurants and some other miscellaneous pics just to get us started.  Just send me whatever images you want to include in the slideshow, and I'll upload them.  Include whatever information you want to attach as a caption, credits, etc.  Have fun with it!

I've created the Flickr account for the photographs that will become our slideshow here on the main page.  Send me whatever photographs you want, and I will upload them to the slideshow as soon as possible.  I'm still tweaking the process, but I'll get it working soon. 
We need photographs of anything:
  • dishes and food from restaurants
  • dishes that you have created (or step-by-step)
  • workplaces
  • restaurants you visit
  • campus and community events
  • anything at all that might be fun, interesting, or useful.
